Gluten free and vegetarian frittata

As noted in a previous post (rich chocolate tart) I went to an Australia Day BBQ and took along both a sweet and savory plate. For the savory plate I decided on a vegetarian frittata as it is easy to make and also tastes good cold!There really is no set recipe, you can use what veges you like and the amount you use depends on how many people you are cooking for.I forgot to take a photo of the end result, but if you are taking it to a party as finger food just cut it up into small squares so that it is easy to eat.
