
Gluten-Free Pumpkin Roll with Pumpkin Cream Cheese
Ingredients:
For the Pumpkin Roll:
ďż˝ 3/4 cup gluten-free all-purpose flour
ďż˝ 1/2 teaspoon baking powder
ďż˝ 1/2 teaspoon baking soda
ďż˝ 1/2 teaspoon ground cinnamon
ďż˝ 1/2 teaspoon ground ginger
ďż˝ 1/4 teaspoon ground nutmeg
ďż˝ 1/4 teaspoon salt
ďż˝ 3 large eggs
ďż˝ 1 cup granulated sugar
ďż˝ 2/3 cup canned pumpkin puree
ďż˝ 1 teaspoon vanilla extract
ďż˝ Powdered sugar (for dusting)
For the Pumpkin Cream Cheese Filling:
ďż˝ 8 oz cream cheese, softened
ďż˝ 1 cup powdered sugar, sifted
ďż˝ 6 tablespoons unsalted butter, softened
ďż˝ 1/2 cup canned pumpkin puree
ďż˝ 1 teaspoon vanilla extract
ďż˝ 1/2 teaspoon ground cinnamon
Instructions:

Prepare the Pumpkin Roll:
ďż˝ Preheat your oven to 375ďż˝F (190ďż˝C). Line a 10×15-inch jelly roll pan with parchment paper and lightly grease it.
ďż˝ In a small bowl, whisk together the gluten-free flour, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt.
ďż˝ In a large bowl, beat the eggs and granulated sugar until thick and pale. Add the pumpkin puree and vanilla extract, and mix until well combined.
ďż˝ Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
ďż˝ Spread the batter evenly into the prepared pan.
ďż˝ Bake for 13-15 minutes, or until the top of the cake springs back when touched.
ďż˝ Immediately turn the cake out onto a clean kitchen towel dusted with powdered sugar. Carefully peel off the parchment paper.
ďż˝ Starting from the short end, roll the cake up with the towel and let it cool completely.

ďż˝ In a medium bowl, beat the cream cheese, powdered sugar, butter, pumpkin puree, vanilla extract, and cinnamon until smooth and creamy.

Assemble the Pumpkin Roll:
ďż˝ Once the cake is completely cool, unroll it gently.
ďż˝ Spread the pumpkin cream cheese filling evenly over the cake.
ďż˝ Re-roll the cake (without the towel) and wrap it in plastic wrap.
ďż˝ Refrigerate for at least 1 hour before serving.
