Gluten-Free Orange Cranberry Scones
Ingredients:
• 2 cups gluten-free all-purpose flour
• 1/2 cup granulated sugar
• 1 tablespoon baking powder
• 1/2 teaspoon baking soda
• 1/2 teaspoon salt
• 1/2 cup cold unsalted butter, cubed
• 1/2 cup dried cranberries
• 1 tablespoon orange zest
• 1/2 cup buttermilk (or dairy-free milk with 1 tablespoon lemon juice)
• 1 large egg
• 1 teaspoon vanilla extract
For the Glaze:
• 1 cup powdered sugar
• 2-3 tablespoons fresh orange juice
Instructions:

Preheat Oven:
• Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Mix Dry Ingredients:
• In a large bowl, whisk together the gluten-free flour, sugar, baking powder, baking soda, and salt.

Cut in Butter:
• Add the cold, cubed butter to the dry ingredients. Use a pastry cutter or your fingers to cut the butter into the flour mixture until it resembles coarse crumbs.

Add Cranberries and Zest:
• Stir in the dried cranberries and orange zest.

Mix Wet Ingredients:
• In a separate bowl, whisk together the buttermilk, egg, and vanilla extract.

Combine Ingredients:
• Pour the wet ingredients into the dry ingredients and mix until just combined. The dough will be slightly sticky.

Shape the Scones:
• Turn the dough out onto a lightly floured surface and pat it into a circle about 1 inch thick. Cut the dough into 8 wedges and place them on the prepared baking sheet.

Bake:
• Bake for 15-18 minutes, or until the scones are golden brown and a toothpick inserted into the center comes out clean. Allow the scones to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Prepare the Glaze:
• In a small bowl, whisk together the powdered sugar and orange juice until smooth. Drizzle the glaze over the cooled scones.
