Gluten-free Maamoul

Ingredients:
For the Dough:
• 2 cups gluten-free flour blend (a mix of rice flour, cornstarch, and potato starch works well)

• 1/2 cup almond flour

• 1/2 cup unsalted butter, softened

• 1/4 cup sugar

• 1/4 cup milk (dairy or non-dairy)

• 1 teaspoon vanilla extract

• 1/2 teaspoon ground cardamom (optional)

• A pinch of salt

For the Filling:
• 1 cup pitted dates, finely chopped

• 1/4 cup walnuts or pistachios, finely chopped (optional)

• 1 tablespoon honey or maple syrup

• 1/2 teaspoon ground cinnamon

• 1/4 teaspoon ground nutmeg

Instructions:
1. Prepare the Dough:
• In a large bowl, cream together the softened butter and sugar until light and fluffy.

• Add the milk and vanilla extract, and mix until well combined.

• In a separate bowl, whisk together the gluten-free flour blend, almond flour, cardamom, and salt.

• Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms. If the dough is too dry, add a little more milk, one tablespoon at a time.

1. Prepare the Filling:
• In a small bowl, combine the chopped dates, nuts (if using), honey or maple syrup, cinnamon, and nutmeg. Mix until well combined.
2. Shape the Maamoul:
• Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

• Take a small piece of dough (about the size of a walnut) and flatten it into a disc.

• Place a small amount of filling in the center of the disc, then fold the edges over the filling and shape it into a ball.

• Press the filled dough into a Maamoul mold or shape it by hand, then gently tap it out onto the baking sheet. Repeat with the remaining dough and filling.

1. Bake:
• Bake the Maamoul in the preheated oven for 15-20 minutes, or until the edges are lightly golden.

• Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

1. Serve:
• Once cooled, dust the Maamoul with powdered sugar if desired. Enjoy these delicious gluten-free treats with a cup of tea or coffee!
