Gluten free banoffee pie
I’m back… and I am going to start making up for my Absense with this amazing recipe for Gluten free banoffee pie. Since moving to London I haven’t done much baking except when I went through a Phase of making Gluten free banana bread (Recipe to come). However more Recently I moved House and my new Housemate loves to bake. So what better to do on a cold rainy Friday night in London than some baking! I don’t think I had actually ever eaten banoffee pie, even before I was Diagnosed coeliac, so I was very excited. It turns out that banoffee pie is super easy to make it’s just the time you have to wait Between each step. I have to admit though we kind of cheated by buying the caramel condensed milk rather than boiling condensed milk for 2 hours ( Online recounts of exploding condensed Milk cans put me off!). Not only is this easy to make but it tastes amazing. Not too rich, and the contrast of the crunchy base and smooth toppings of caramel, cream and banana just works.
