Gluten-Free Orange Mousse
Ingredients:
• 3/4 cup fresh orange juice (about 2-3 oranges)

• 1 tablespoon orange zest

• 1/2 cup granulated sugar

• 1/4 teaspoon salt

• 1 tablespoon unflavored gelatin

• 1 cup heavy cream (or coconut cream for a dairy-free option)

• 1 teaspoon vanilla extract

Instructions:

Prepare the Orange Base:
• In a small saucepan, combine the fresh orange juice, orange zest, sugar, and salt. Heat over medium heat until the sugar is dissolved, stirring occasionally.

• Sprinkle the gelatin over the mixture and let it sit for about 3 minutes to bloom.

• Heat the mixture again, stirring constantly, until the gelatin is completely dissolved. Remove from heat and let it cool to room temperature.

Whip the Cream:
• In a large bowl, whip the heavy cream (or coconut cream) with the vanilla extract until stiff peaks form.

Combine and Chill:
• Gently fold the cooled orange mixture into the whipped cream until well combined.

• Spoon the mousse into individual serving dishes or a large bowl.

• Refrigerate for at least 2 hours, or until set.
